### Chicken Moitha Recipe
**Ingredients:**
- Chicken (cut into pieces): 500 grams
- Onions (finely chopped): 2 large
- Garlic paste: 1 teaspoon
- Ginger paste: 1 teaspoon
- Tomatoes (finely chopped): 1 large
- Green chilies (sliced): 2
- Turmeric powder: 1 teaspoon
- Red chili powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Cumin powder: 1 teaspoon
- Garam masala: 1/2 teaspoon
- Mustard oil: 3 tablespoons
- Salt: to taste
- Sugar: 1 teaspoon
- Water: 1 cup
**Instructions:**
1. **Prepare the Spice Mix:**
- Heat mustard oil in a pan until it becomes hot and starts to smoke.
- Add the chopped onions and fry until golden brown.
2. **Cook the Aromatics:**
- Add ginger and garlic paste to the pan and sauté for a few minutes until the raw smell disappears.
3. **Cook the Chicken:**
- Add the chicken pieces and stir well to coat them with the onion mixture.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
4. **Add Tomatoes and Chilies:**
- Stir in the chopped tomatoes and green chilies. Cook until the tomatoes break down and the oil starts to separate from the masala.
5. **Simmer:**
- Add 1 cup of water and mix well. Cover the pan and let it simmer on low heat for about 30 minutes or until the chicken is cooked through and tender.
6. **Finish the Dish:**
- Once the chicken is cooked, stir in the garam masala and sugar. Cook for another 5 minutes to let the flavors blend.
7. **Serve:**
- Serve hot with rice or Indian bread (roti/chapati).
