Fish Egg Curry(মাছের ডিমের বড়ার কারি)

 **Fish Egg Curry** is a unique and flavorful dish made with fish roe (fish eggs). Here’s a step-by-step recipe to help you prepare it.


### Ingredients:

- **For the Curry:**

  - 200g fish roe (fish eggs)

  - 2 medium onions, finely chopped

  - 2 tomatoes, finely chopped

  - 4-5 garlic cloves, minced

  - 1-inch ginger, grated

  - 2 green chilies, slit

  - 1 tsp mustard seeds

  - 1 tsp cumin seeds

  - 1 tsp turmeric powder

  - 2 tsp red chili powder

  - 1 tsp coriander powder

  - 1 tsp garam masala

  - 1 tsp cumin powder

  - 1 tsp fish curry powder (optional)

  - 1 cup coconut milk (optional, for a creamy curry)

  - 3 tbsp oil (mustard oil or vegetable oil)

  - Salt, to taste

  - Fresh coriander leaves for garnishing


### Instructions:


1. **Clean the Fish Eggs**:

   - Wash the fish roe thoroughly under cold running water. Drain and set aside.


2. **Preparation of Curry Base**:

   - Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.

   - Add the minced garlic, grated ginger, and green chilies. Sauté until fragrant.

   - Add the finely chopped onions and sauté until they turn golden brown.


3. **Spice it up**:

   - Add turmeric powder, red chili powder, coriander powder, cumin powder, and fish curry powder (if using). Mix well and cook for a minute.

   - Add chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.


4. **Cook the Fish Eggs**:

   - Add the cleaned fish eggs to the pan. Gently stir so the eggs break into smaller pieces but are not mashed.

   - Cook for 3-4 minutes, ensuring the eggs are well-coated with the masala.


5. **Add Coconut Milk** (Optional):

   - If you prefer a creamy curry, pour in the coconut milk at this stage. Stir well and simmer the curry for 10 minutes on low heat.


6. **Final Seasoning**:

   - Add salt and garam masala. Mix and let the curry simmer for a few more minutes until the fish eggs are cooked through and the curry has reached the desired consistency.


7. **Garnish**:

   - Turn off the heat and garnish with fresh coriander leaves.


8. **Serve**:

   - Serve the fish egg curry hot with steamed rice or flatbreads like roti or paratha.
