Kolkata Style Mutton Roll(মটন রোল)

 The **Kolkata-style Mutton Roll** is a beloved street food, featuring spiced mutton wrapped in a flaky paratha with onions and sauces. Here’s how to make it at home:


### Ingredients:


#### For Mutton Filling:

- 500g boneless mutton (cut into small pieces)

- 2 medium onions (thinly sliced)

- 1 large tomato (chopped)

- 1 tbsp ginger-garlic paste

- 2 green chilies (slit)

- 1 tbsp yogurt

- 1 tsp turmeric powder

- 1 tsp red chili powder

- 1 tsp cumin powder

- 1 tsp coriander powder

- 1 tsp garam masala powder

- Salt to taste

- 3 tbsp mustard oil (or any cooking oil)

- Fresh coriander leaves (chopped)


#### For the Paratha:

- 2 cups all-purpose flour (maida)

- 1 tbsp oil or ghee

- Salt to taste

- Water (for kneading)

- Oil for frying


#### For Assembly:

- 1 medium onion (thinly sliced)

- 1 cucumber (thinly sliced)

- Green chilies (optional, for extra spice)

- Chaat masala (optional)

- Lemon wedges

- Tomato ketchup

- Green chutney (optional)

- Egg (optional, for egg roll variation)


### Instructions:


#### 1. Prepare the Mutton Filling:

- **Marinate the Mutton:** In a bowl, mix mutton pieces with turmeric, chili powder, ginger-garlic paste, and yogurt. Let it marinate for 30 minutes to 1 hour.

- **Cook the Mutton:** Heat mustard oil in a pan. Add sliced onions and sauté until golden brown. Add tomatoes and cook until soft.

- Add the marinated mutton to the pan and stir well. Add cumin powder, coriander powder, and salt. Cook the mutton on medium heat, stirring occasionally, until it’s tender (add water if needed). Finish by sprinkling garam masala and freshly chopped coriander leaves. Set aside.


#### 2. Prepare the Paratha:

- In a bowl, mix flour, salt, and oil/ghee. Gradually add water and knead it into a smooth, soft dough. Cover and let it rest for 15-20 minutes.

- Divide the dough into balls and roll them out into thin parathas.

- Heat oil in a pan or tawa, and fry each paratha until both sides are golden and slightly crispy. If you want an egg roll variation, crack an egg on the paratha while it's cooking and let it set before flipping.


#### 3. Assemble the Roll:

- Place a paratha on a flat surface. Add a generous amount of mutton filling in the center.

- Top it with sliced onions, cucumber, green chilies (if you like), and sprinkle chaat masala.

- Drizzle some ketchup and green chutney as per your preference.

- Squeeze some lemon juice on top for a tangy kick.


#### 4. Roll It Up:

- Fold the paratha from one side over the filling, then roll it tightly. Wrap it in parchment or foil to hold it together, making it easy to eat.
