Village Style Spicy Periwinkle Recipe(গেড়ি গুগলি ভর্তা)

Here's a recipe for a spicy Bengali-style periwinkle dish, known as " or Gayri Gugli Bhorta." This dish is typically prepared with periwinkle snails, which are small but flavorful. 


### Ingredients:

- 500 grams periwinkle (cleaned thoroughly)

- 2 medium onions, finely chopped

- 2-3 green chilies, chopped

- 1 medium tomato, chopped

- 2 tablespoons mustard oil (or any cooking oil of your choice)

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves for garnish


### Instructions:


1. **Prepare the Periwinkle:**

   - Clean the periwinkle thoroughly. You can soak them in water for a few hours and scrub them to remove any grit.

   - In a pot, boil the periwinkle in salted water for about 10-15 minutes or until they are cooked. Drain and set aside.


2. **Cook the Base:**

   - Heat mustard oil in a pan. Once the oil is hot, add the finely chopped onions and green chilies. Sauté until the onions turn golden brown.

   - Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.


3. **Add Spices:**

   - Add turmeric powder, red chili powder, cumin powder, and coriander powder. Stir well and cook for a few minutes until the spices are well incorporated and the raw smell disappears.


4. **Add Periwinkle:**

   - Add the boiled periwinkle to the pan. Mix well to ensure the periwinkle is coated with the spice mixture.

   - Cook on medium heat for about 5-7 minutes, stirring occasionally. 


5. **Finish the Dish:**

   - Add salt to taste and garam masala. Stir well and cook for another 2-3 minutes.

   - Garnish with fresh coriander leaves.


6. **Serve:**

   - Serve the spicy periwinkle dish hot with steamed rice or traditional Bengali rotis.
