Here's the recipe for Data Chorchori (a Bengali-style stem stir-fry) in English. It's a simple yet flavorful dish made with the stems of leafy greens like spinach or red amaranth.
Ingredients:
Spinach or red amaranth stems – 250 grams (chopped into medium pieces)
Potato – 1 (cut into small cubes)
Eggplant – 1 (cut into small cubes)
Green chilies – 2-3 (slit)
Mustard oil – 2 tablespoons
Dry red chili – 1
Nigella seeds (kalonji) – 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Salt – to taste
Sugar – 1/2 teaspoon (optional)
Instructions:
1. Heat the Oil: In a pan, heat mustard oil. When it’s hot, add the dry red chili and nigella seeds for tempering.
2. Sauté the Vegetables: Add the potato and eggplant cubes, and stir-fry them lightly. Next, add the green chilies and chopped stems (data) to the pan.
3. Add Spices: Sprinkle turmeric powder and salt, and mix everything well.
4. Cover and Cook: Cover the pan and cook on medium heat, stirring occasionally, until the vegetables are soft and the stems are well-cooked.
5. Add Sugar: Once the vegetables are tender, add a little sugar if you prefer a hint of sweetness. Stir well to mix.
6. Serve: Once everything is nicely cooked, turn off the heat.
