### Doi Katla Recipe
**Ingredients:**
- 500g Katla fish (or any firm white fish)
- 1 cup yogurt (curd)
- 2 tablespoons mustard oil
- 2 onions, finely sliced
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- Salt, to taste
- Fresh coriander leaves, for garnish
**Instructions:**
1. **Marinate the Fish:**
- Clean the Katla fish and cut it into pieces. Marinate with turmeric, salt, and half of the yogurt for 30 minutes.
2. **Prepare the Gravy:**
- Heat mustard oil in a pan until hot. Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies; cook for a minute until fragrant.
- Stir in the remaining yogurt, turmeric, red chili powder, and coriander powder. Cook until the oil separates.
3. **Cook the Fish:**
- Gently add the marinated fish pieces to the gravy. Cook on low heat for about 10-15 minutes, turning the fish carefully to avoid breaking.
4. **Finish:**
- Adjust salt as needed. Cook until the fish is tender and the gravy is thick.
- Garnish with fresh coriander leaves.
5. **Serve:**
- Serve hot with steamed rice or roti.
