### Egg Poached Curry Recipe
**Ingredients:**
- 4 eggs
- 2 medium onions, finely chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies (slit)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 2-3 tablespoons oil (vegetable or mustard)
- Salt to taste
- Fresh coriander leaves (for garnishing)
- 1 cup water
**Instructions:**
1. **Prepare the Eggs:**
- Boil the eggs until hard-boiled (about 8-10 minutes). Peel and set aside.
2. **Make the Curry Base:**
- Heat oil in a pan. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Cook for 2-3 minutes until fragrant.
3. **Add Tomatoes and Spices:**
- Add chopped tomatoes and cook until they soften.
- Stir in turmeric, red chili, cumin, and coriander powders. Cook for another 2-3 minutes.
4. **Simmer the Curry:**
- Add water and salt, bringing the mixture to a boil. Simmer for about 5 minutes.
5. **Poach the Eggs:**
- Gently make small wells in the curry and carefully crack the boiled eggs into them. Cover and cook for another 5 minutes, allowing the flavors to meld.
6. **Finish and Serve:**
- Sprinkle garam masala and garnish with fresh coriander leaves.
- Serve hot with rice or bread.
