**Kakrar Bati Bosa** (Crab Curry Cooked in a Bowl) is a traditional Bengali dish where crab is cooked with spices and sometimes steamed inside a bowl for enhanced flavor. Here's how to make it:
### Ingredients:
- 4 medium-sized crabs (cleaned and cut into pieces)
- 2 medium-sized potatoes (cubed)
- 2 onions (finely chopped)
- 2 tomatoes (chopped)
- 2-3 green chilies (slit)
- 2 tbsp mustard oil (or any other cooking oil)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp ginger-garlic paste
- 1/2 tsp garam masala powder
- Salt to taste
- Water (as needed)
- Fresh coriander leaves for garnish
### Instructions:
1. **Prepare the Crab**:
- Clean the crabs thoroughly and remove any dirt. Cut them into manageable pieces, leaving the claws and legs intact.
2. **Marinate the Crab**:
- Marinate the crab pieces with salt, turmeric powder, and a little red chili powder. Let them sit for 15-20 minutes.
3. **Fry the Crab**:
- Heat mustard oil in a pan until it smokes, then lower the heat. Fry the marinated crabs for about 4-5 minutes until they turn golden. Remove from the pan and set aside.
4. **Prepare the Gravy**:
- In the same oil, add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and cook for 2-3 minutes.
- Add chopped tomatoes and cook until they soften.
- Add turmeric powder, red chili powder, cumin powder, and coriander powder. Stir well and cook the spices for a few minutes until the oil separates from the masala.
- Add the cubed potatoes and cook for 5 minutes, stirring occasionally.
5. **Add Water and Simmer**:
- Add water to create a thick gravy (around 1-2 cups depending on how much curry you want).
- Cover and cook until the potatoes are almost done.
6. **Steam the Curry in a Bowl**:
- Transfer the curry along with the crabs into a heatproof bowl or clay pot (bati).
- Seal the bowl with a lid or cover it tightly with aluminum foil.
- Place this bowl in a steamer or a large pot with some water at the bottom and steam for about 20-25 minutes to allow all the flavors to blend well.
7. **Final Touch**:
- Once done, remove the bowl from the steamer. Sprinkle garam masala powder and garnish with fresh coriander leaves.
8. **Serve**:
- Serve hot with steamed rice.
