#### Ingredients
**For the Mutton Marinade:**
- 500g mutton, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1-inch piece ginger, minced
- 2-3 green chilies, slit
- 1 tablespoon biryani masala (or garam masala)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt, to taste
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Juice of 1 lemon
**For the Rice:**
- 2 cups basmati rice
- 4 cups water
- 2-3 whole cloves
- 2-3 cardamom pods
- 1 bay leaf
- 1 cinnamon stick
- Salt, to taste
**For Cooking:**
- 3 tablespoons ghee or oil
- Fried onions, for garnish
- Boiled eggs (optional), for garnish
#### Instructions
1. **Marinate the Mutton**: In a large bowl, mix mutton with yogurt, sliced onions, garlic, ginger, green chilies, biryani masala, turmeric, red chili powder, salt, coriander, mint, and lemon juice. Cover and marinate for at least 2 hours (overnight for best results).
2. **Cook the Rice**: Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain. In a large pot, bring water to a boil. Add whole spices (cloves, cardamom, bay leaf, cinnamon) and salt. Add the soaked rice and cook until 70% done (about 5-6 minutes). Drain and set aside.
3. **Cook the Mutton**: In a large, heavy-bottomed pot, heat ghee or oil over medium heat. Add the marinated mutton (with all the marinade) and cook until the mutton is browned and tender (about 20-25 minutes).
4. **Layer the Biryani**: Once the mutton is cooked, reduce the heat to low. Layer half of the partially cooked rice over the mutton. Sprinkle half of the fried onions, some mint, and coriander. Add the remaining rice and top with the rest of the fried onions.
5. **Dum Cooking**: Cover the pot with a tight-fitting lid or seal with dough to trap steam. Cook on low heat for about 30-40 minutes, allowing the flavors to meld.
6. **Serve**: Gently fluff the biryani before serving. Garnish with boiled eggs (if using) and additional fried onions. Serve with raita or salad.
