Spicy Mutton kosha (মটন কষা)

 ### Spicy Mutton Recipe


#### Ingredients:

- Mutton - 1 kg (bone-in preferred)

- Onions - 3 (sliced)

- Ginger-garlic paste - 2 tbsp

- Tomatoes - 2 (chopped)

- Yogurt - 1 cup

- Green chilies - 4-5 (slit)

- Bay leaves - 2

- Cinnamon stick - 1 inch

- Green cardamom - 2

- Cloves - 3-4

- Turmeric powder - 1 tsp

- Red chili powder - 1 tbsp (adjust to taste)

- Coriander powder - 1 tsp

- Cumin powder - 1 tsp

- Salt - to taste

- Oil - 4 tbsp

- Fresh coriander leaves - for garnish


#### Instructions:


1. **Marinate the Mutton**: In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Add the mutton and coat well. Let it marinate for at least 1 hour (preferably overnight).


2. **Heat Oil**: In a handi or heavy-bottomed pot, heat the oil over medium heat. 


3. **Sauté Spices**: Add bay leaves, cinnamon, cardamom, and cloves. Sauté for a minute until fragrant.


4. **Cook Onions**: Add sliced onions and cook until golden brown.


5. **Add Tomatoes**: Stir in the chopped tomatoes and green chilies. Cook until the tomatoes soften and the oil starts to separate.


6. **Cook Mutton**: Add the marinated mutton to the pot. Stir well and cook for about 5-7 minutes on high heat until the meat is browned.


7. **Add Water**: Add enough water to cover the mutton. Bring it to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the mutton is tender. Stir occasionally and add more water if needed.


8. **Final Adjustments**: Once the mutton is cooked, check the seasoning and adjust salt and spices as needed.


9. **Garnish and Serve**: Garnish with fresh coriander leaves and serve hot with naan or rice.
