Recipe of Lotka Fish Curry (লটকে মাছের রষা)
Ingredients:
Lotka fish: 500 grams (cleaned)
Mustard oil: 3 tablespoons
Onions: 2 medium-sized (finely sliced)
Tomatoes: 1 large (finely chopped)
Garlic paste: 1 teaspoon
Ginger paste: 1 teaspoon
Green chilies: 3-4 (slit)
Turmeric powder: 1 teaspoon
Red chili powder: 1 teaspoon (adjust to taste)
Cumin powder: 1 teaspoon
Coriander powder: 1 teaspoon
Salt: To taste
Water: 2 cups
Fresh coriander leaves: For garnish

Instructions:
1. Prepare the fish:
Wash the lotka fish thoroughly.
Rub them with salt and turmeric powder and set aside for 10 minutes.
2. Fry the fish:
Heat mustard oil in a pan until it smokes slightly.
Lower the heat and fry the fish pieces lightly on both sides. Remove and set aside.
3. Cook the spices:
In the same pan, add more mustard oil if needed.
Add sliced onions and fry until golden brown.
Add garlic paste, ginger paste, and cook for 1-2 minutes until aromatic.
Add tomatoes, turmeric powder, red chili powder, cumin powder, and coriander powder.
Cook until the oil separates from the masala.
4. Make the curry:
Add 2 cups of water to the pan. Bring it to a boil.
Gently slide in the fried fish pieces.
Add slit green chilies and salt as per taste.
Let it simmer on low heat for 10-12 minutes so the fish absorbs the spices.
5. Garnish and serve:
Sprinkle fresh coriander leaves on top.
Serve hot with steamed rice or parathas.
