Recipe of Shukno Bode (Dry Lentil Fritters)
Ingredients:
Besan (gram flour) - 1 cup
Rice flour - 1 tablespoon
Turmeric powder - 1/4 teaspoon
Red chili powder - 1/2 teaspoon
Cumin powder - 1/4 teaspoon
Green chili paste - 1 teaspoon
Salt - to taste
Water - as needed
Oil - for deep frying
Preparation Method:
1. In a large mixing bowl, combine the gram flour and rice flour.
2. Add turmeric powder, red chili powder, cumin powder, green chili paste, and salt. Mix well.
3. Gradually add water to form a thick batter. Ensure the batter is not too runny.
4. Heat oil in a deep frying pan or wok.
5. Using your hand or a spoon, drop small dollops of batter into the hot oil.
6. Fry on medium heat until the fritters turn golden brown and crispy.
7. Remove the fritters and place them on a paper towel to absorb excess oil.
Serving:
Once cooled, store the shukno bode in an airtight container. Enjoy it as a snack, with puffed rice (muri), or as a crunchy side dish.
Tips:
To make the fritters extra crispy, you can add a pinch of baking soda to the batter.
Let the batter rest for 10 minutes before frying for fluffier fritters.
