Dudh Morich Chicken (Milk Chili Chicken) Recipe
Ingredients:
Chicken: 500g (cut into medium pieces)
Milk: 1 cup (full-fat)
Green chilies: 5-6 (adjust to spice preference)
Onion: 2 medium (finely chopped)
Ginger paste: 1 tsp
Garlic paste: 1 tsp
Yogurt: 2 tbsp
Bay leaf: 1
Cardamom: 2-3
Cloves: 2-3
Cinnamon stick: 1 small piece
Cumin powder: 1 tsp
Coriander powder: 1 tsp
Turmeric powder: 1/2 tsp
Salt: to taste
Sugar: 1 tsp
Ghee: 2 tbsp
Oil: 2 tbsp
Fresh cream (optional): 2 tbsp
Water: as needed

Instructions:
1. Marinate the chicken:
In a bowl, mix chicken with yogurt, turmeric powder, cumin powder, coriander powder, salt, and a little oil. Let it marinate for at least 30 minutes.
2. Prepare the base:
Heat ghee and oil in a pan. Add bay leaf, cardamom, cloves, and cinnamon stick. Sauté for a few seconds until aromatic.
3. Cook onions:
Add chopped onions and fry until golden brown. Add ginger and garlic paste. Cook for another 2 minutes.
4. Add chicken:
Add the marinated chicken and cook on medium heat until the chicken turns white and the spices are well coated.
5. Add milk:
Lower the heat and pour in the milk gradually while stirring to prevent curdling. Add sugar and adjust salt if needed.
6. Simmer:
Add slit green chilies and a little water (if the gravy is too thick). Cover and let the chicken simmer for 15-20 minutes until it is fully cooked and the gravy thickens.
7. Finish:
Stir in fresh cream for extra richness (optional). Cook for another 2-3 minutes and remove from heat.
8. Serve:
Serve hot with steamed rice, paratha, or naan.
