Recipe for Peyaj Til Posto (Onion with Sesame and Poppy Seed Paste)
Ingredients:
2 tablespoons white sesame seeds (til)
3 tablespoons poppy seeds (posto)
1 large onion, thinly sliced
2 green chilies, slit (adjust to taste)
Salt, to taste
1/4 teaspoon turmeric powder
2 tablespoons mustard oil (or any cooking oil)
Instructions:
1. Soak the Seeds: Soak the sesame seeds and poppy seeds in warm water for about 15-20 minutes. This will make them easier to blend into a smooth paste.
2. Grind the Paste: Drain the water from the seeds, then grind the sesame seeds and poppy seeds into a fine paste using a little water.
3. Sauté the Onion: Heat mustard oil in a pan. Add the sliced onions and green chilies, and sauté them on medium heat until the onions turn golden brown.
4. Add the Paste and Seasoning: Add the sesame-poppy seed paste to the pan, then add salt and turmeric powder. Stir everything well, and cook on low heat, stirring occasionally to prevent sticking, until the oil begins to separate from the paste.
5. Serve: Once cooked, take it off the heat and serve hot. Peyaj Til Posto pairs wonderfully with steamed rice or roti.
