Bhapa Sandesh (Steamed Sandesh) Recipe
Ingredients:
1 cup paneer (cottage cheese) or fresh chhena
1/2 cup condensed milk
2-3 tbsp powdered sugar (adjust to taste)
1/4 tsp cardamom powder
1 tbsp milk (optional, to adjust consistency)
1-2 tbsp ghee (to grease)
Few strands of saffron (optional, for garnish)
Chopped pistachios or almonds (for garnish)
Instructions:
1. Prepare Paneer/Chhena: Crumble the paneer or fresh chhena into a smooth, soft texture. You can also blend it briefly if it’s a bit grainy, but avoid over-blending, as it should retain some texture.
2. Make the Mixture: In a mixing bowl, combine the crumbled paneer, condensed milk, powdered sugar, and cardamom powder. Mix well until it forms a smooth, slightly thick batter. Add a little milk if the mixture seems too thick to achieve a creamy consistency.
3. Prepare Steaming Dish: Grease a small, deep container or baking dish with ghee. This will help the sandesh to release easily after cooking.
4. Pour and Smooth the Mixture: Pour the paneer mixture into the greased dish, spreading it evenly with a spatula.
5. Steam the Mixture:
If you’re using a steamer, place the container in the steamer, cover with a lid, and steam for about 20-25 minutes.
Alternatively, if you’re using a pressure cooker, add a little water to the bottom, place the container on a stand, cover (without the whistle), and steam for 20-25 minutes.
Check for doneness; the sandesh should be set but soft when lightly pressed.
6. Cool and Garnish: Let the steamed sandesh cool for a few minutes. Garnish with saffron strands and chopped nuts if desired.
7. Serve: Once it has cooled completely, cut into pieces and serve.
