Palm Pulp Sandesh(তাল আটির সন্দেশ)

 Recipe for Tal Atir Sandesh (Palm Pulp Sandesh)


Ingredients:


Ripe palm fruit (Tal) pulp – 1 cup


Grated jaggery or sugar – 1 cup (adjust to taste)


Freshly grated coconut – 1 cup


Milk – ½ cup


Ghee (clarified butter) – 2 tbsp



Instructions:


1. Extract Palm Pulp:


Wash the ripe palm fruit thoroughly. Remove the outer skin and separate the pulp from the seeds.


Mash the pulp and strain it through a fine sieve to remove fibers, ensuring smooth pulp.




2. Cook the Mixture:


Heat a thick-bottomed pan or kadhai on medium heat and add the ghee.


Add the palm pulp, grated coconut, and jaggery/sugar. Stir the mixture continuously.




3. Add Milk:


Pour in the milk gradually while stirring to prevent lumps.


Cook on medium-low heat until the mixture thickens and starts leaving the sides of the pan.




4. Shape the Sandesh:


Allow the mixture to cool slightly but remain pliable.


Grease your hands lightly with ghee and shape the mixture into small round or oval sandesh pieces. Alternatively, you can press the mixture into molds for decorative shapes.




5. Cool and Serve:


Let the sandesh cool completely to firm up.


Serve as a delightful sweet or store in an airtight container for 2-3 days.
