Here's the recipe for Pineapple Chutney (আনারসের চাটনি):
Ingredients:
Pineapple – 1 medium, peeled and finely chopped
Sugar – 1 cup (adjust according to sweetness)
Salt – a pinch
Turmeric powder – 1/4 teaspoon
Mustard seeds – 1/2 teaspoon
Dried red chilies – 2
Bay leaf – 1
Grated ginger – 1 teaspoon
Raisins – 2 tablespoons (optional)
Lemon juice – 1 tablespoon (optional)
Water – 1/2 cup
Instructions:
1. Prepare the pineapple: Peel and finely chop the pineapple into small pieces.
2. Cooking the chutney:
In a pan, add the chopped pineapple and water. Cook on medium heat for about 5–7 minutes or until the pineapple becomes soft.
Add turmeric powder, salt, and sugar. Mix well and let it simmer on low heat until the mixture thickens.
3. Tempering:
In a separate small pan, heat a little oil and add mustard seeds, dried red chilies, and a bay leaf.
Once the mustard seeds start spluttering, add the grated ginger and sauté for a minute.
4. Combine:
Pour the tempering over the pineapple mixture and stir well.
Add raisins if using, and cook for an additional 2–3 minutes.
5. Finishing touch:
Turn off the heat and let the chutney cool slightly.
Add lemon juice for a hint of tanginess, if desired.
6. Serve:
Serve the chutney chilled or at room temperature with rice, roti, or as a side with your main dishes.
