### Bengali Muri Ghonto Recipe
**Ingredients:**
- 1 cup rice (preferably gobindobhog or any fragrant rice)
- 250 grams fish head (rohu or similar)
- 1 medium potato, diced
- 1 medium onion, finely chopped
- 2-3 green chilies (slit)
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 2-3 tablespoons mustard oil
- Salt to taste
- Fresh coriander leaves (for garnishing)
**Instructions:**
1. **Preparation of Rice:**
- Wash and soak the rice for about 30 minutes. Drain and set aside.
2. **Fry the Fish Head:**
- In a pot, heat mustard oil until hot. Fry the fish head until golden brown. Remove and set aside.
3. **Sauté Aromatics:**
- In the same oil, add chopped onions and sauté until they turn golden. Add ginger and garlic paste, cooking for another 2-3 minutes.
4. **Add Spices:**
- Stir in turmeric, cumin, and coriander powder. Cook for a couple of minutes until fragrant.
5. **Combine Potatoes and Fish:**
- Add diced potatoes and fry for a few minutes. Then, add the fried fish head back into the pot.
6. **Add Rice:**
- Gently add the soaked rice and mix everything well. Be careful not to break the fish head.
7. **Cooking:**
- Add 2 cups of water (adjust based on rice type), salt, and green chilies. Bring to a boil, then cover and simmer on low heat until the rice is cooked and water is absorbed (about 15-20 minutes).
8. **Final Touch:**
- Once done, fluff the rice gently. Garnish with fresh coriander leaves.
9. **Serve:**
- Serve hot with a side of dal and salad.
