### Soyachunk Paratha Recipe
#### Ingredients:
**For the Filling:**
- 1 cup soy chunks
- 1 onion, finely chopped
- 1-2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1 tsp coriander powder
- Salt, to taste
- 2 tbsp oil
- Fresh coriander leaves, chopped (optional)
**For the Dough:**
- 2 cups whole wheat flour
- Water, as needed
- Salt, to taste
- 1-2 tbsp oil (optional)
#### Instructions:
1. **Prepare Soy Chunks:**
- Boil water in a pot and add soy chunks. Cook for about 5-7 minutes until they are soft. Drain and squeeze out excess water. Chop them finely.
2. **Make the Filling:**
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Cook for another minute.
- Add the chopped soy chunks, garam masala, coriander powder, and salt. Mix well and cook for 3-4 minutes. Stir in chopped coriander if using. Let it cool.
3. **Prepare the Dough:**
- In a bowl, mix whole wheat flour and salt. Gradually add water and knead to form a soft dough. Optionally, add oil for a softer texture. Cover and let it rest for 20-30 minutes.
4. **Assemble the Parathas:**
- Divide the dough into small balls. Take one ball and roll it out into a small circle.
- Place a spoonful of the soy chunk filling in the center. Gather the edges and seal the filling inside.
- Roll out gently into a circle, ensuring the filling doesn't spill out.
5. **Cook the Parathas:**
- Heat a tava or skillet over medium heat. Place the rolled paratha on it.
- Cook for 1-2 minutes until you see bubbles, then flip and apply oil or ghee on both sides. Cook until golden brown and crispy.
- Repeat with the remaining dough and filling.
6. **Serve:**
- Serve hot with yogurt, pickles, or your favorite chutney.
