### Recipe for Rohu Machher Kasha (Rohu Fish Curry)
**Ingredients:**
- 500g Rohu fish (Rui mach)
- 2 medium onions (finely sliced)
- 2 medium tomatoes (chopped)
- 2-3 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 3-4 tablespoons mustard oil (or any cooking oil)
- Salt to taste
- Fresh coriander leaves (for garnish)
**Instructions:**
1. **Prepare the Fish:**
- Clean the Rohu fish pieces and marinate with turmeric powder and salt. Set aside for about 15-20 minutes.
2. **Fry the Fish:**
- Heat mustard oil in a pan. Once hot, add the marinated fish pieces and fry until golden brown on both sides. Remove and set aside.
3. **Cook the Base:**
- In the same oil, add the sliced onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
4. **Add Spices:**
- Stir in the chopped tomatoes and green chilies. Cook until the tomatoes soften.
- Add turmeric, red chili, cumin, and coriander powders. Mix well and cook for another 2-3 minutes.
5. **Combine Fish and Sauce:**
- Gently add the fried fish pieces to the pan. Mix carefully to coat the fish with the spice mixture.
- Add a little water if needed to create a gravy. Cover and cook on low heat for about 10-15 minutes, allowing the flavors to meld.
6. **Finish:**
- Taste and adjust salt if necessary. Garnish with fresh coriander leaves.
7. **Serve:**
- Serve hot with steamed rice or luchi (fried bread).
