Shrimp with Colocasia Leave( চিংড়ি দিয়ে কচু শাক)

 ### Shrimp  with Colocasia Leaves (Chingri Diya Kochu Shak)


#### Ingredients:

- 250g shrimp, cleaned and deveined

- 200g colocasia leaves (kochu shak), chopped

- 2 tablespoons mustard oil (or vegetable oil)

- 1 teaspoon cumin seeds

- 2-3 green chilies, slit

- 1 medium onion, finely chopped

- 2-3 cloves garlic, minced

- 1 teaspoon ginger paste

- Salt, to taste

- Turmeric powder, to taste

- 1 teaspoon red chili powder (optional)

- Water, as needed


#### Instructions:


1. **Prepare the Leaves**: Wash the colocasia leaves thoroughly and chop them finely. Set aside.


2. **Cook the Shrimp**: In a pan, heat mustard oil over medium heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.


3. **Sauté Aromatics**: In the same pan, add cumin seeds. Once they sizzle, add chopped onions and sauté until they turn golden brown. Add minced garlic, ginger paste, and slit green chilies, cooking for another minute.


4. **Add Spices**: Stir in turmeric and red chili powder (if using), followed by the chopped colocasia leaves. Mix well.


5. **Combine Shrimp and Cook**: Return the cooked shrimp to the pan. Add salt and a little water (just enough to create steam). Cover and cook for about 10-15 minutes, stirring occasionally, until the leaves are tender.


6. **Serve**: Once cooked, adjust seasoning if needed. Serve hot with steamed rice.
